Georgia is getting cooler, so I’m in the mood to bake. I like to make something special on Saturdays, so our family can have breakfast together. We often make gluten-free waffles, because my younger daughter is gluten-sensitive. Most of the time I use oat, rice, and corn flour, tapioca starch. Try these waffles, they are easy to make and they turn out really delicious! I love that they’re tender on the inside, little crispy on the edges, studded with warm cinnamon apples and a drizzle of maple syrup.
I use the DASH mini waffle maker. I love this waffle maker because the waffles never stick to it despite the fact that I cook them without oil. I know it takes longer to make waffles with just one side, but I love it anyway. You can use your favorite waffle maker to make these apple cinnamon waffles!
Apple Cinnamon Waffles
Ingredients
- 150 g oat flour
- 50 g corn flour
- 15 g tapioca flour
- 15 g flax seed meal
- 1 tbsp cinnamon, ground
- 1 tsp baking soda
- 15 g lemon juice
- 125 g bananas, mashed
- 430 ml warm water
- 1 apple, large shredded
Instructions
- Mix all ingredients together except the apples. Mix well.
- Add shredded apples, mix together.
- Bake waffles according to the waffle maker instructions.
- Garnish with apples and ground cinnamon.
