Where I am from in Ukraine there is a very popular carrot salad named Korean carrots (морковь по-корейски). I’m not sure where this name came from, since they have no such salad in Korea, 🙂 but in Russian cultures this is a really popular salad. It is similar to the American side coleslaw.
I made this ginger carrot salad with a few different spices. It contains some of my favorite ingredients: garlic, ginger, and turmeric. I use these spices everywhere and almost everyday. They have such beneficial nutrients, especially needed during the current global pandemic. Carrots themselves have a lot of vitamins, such as A, C, E, group B vitamins, and minerals. This slaw makes a great side addition to any lunch or dinner!
Ginger Carrot Salad
Equipment
- grater
Ingredients
- 2 lbs rainbow carrots
- 1 tbsp ginger, fresh grated
- 1 tsp turmeric powder
- 1 tbsp salt
- 1 tbsp lemon juice
- 1 tbsp maple syrup
- 1 dash black peppers
- 1 dash hot pepper
Instructions
- Grate carrots with a fine grater.
- Using gloves, mix carrots with remaining ingredients well.
- Store in the jar in refrigerator.
