While I was on a low FODMAP diet, I was craving pancakes. I needed to use ingredients that I could eat on a low FODMAP diet.
For this recipe, I decided to use simple ingredients that I had at home, such as green buckwheat, grounded into flour, cacao powder, maple syrup, flaxseed meal, and water. I am in love with these chocolate pancakes! They taste so delicious and so chocolatey.

Ingredients
- 140 g green buckwheat groats
- 20 g flaxseed meal
- 40 g cocoa powder
- 1/2 tsp baking soda
- 100 g maple syrup
- 300 ml water
Instructions
- Grind buckwheat groats into flour.
- Combine all the ingredients together in a bowl.
- Blend the mixture with a mixer until smooth.
- Preheat a non-stick pan to medium heat.
- Cook on both sides.
