- 100 g baby arugula
- 8 cherry tomatoes
- ½ avocado, sliced
- 1 tbsp chopped red onion
- 1 tbsp pine nuts
Salad Dressing
- 40 g pine nut butter
- 25 g lemon juice
- 15 g maple syrup
- ½ tsp granulated garlic
- ½ tsp salt
- ¼ tsp black pepper
Place baby arugula leaves in a bowl. Top with cherry tomatoes, sliced avocado, and chopped onions. Sprinkle pine nuts on top.
For the dressing, blend all ingredients in a small blender until well combined.
Drizzle dressing over the salad and enjoy!
